Vermicelli Pulao Recipe

Vermicelli Pulao

Ingredients:
Vermicell – 2 cups
Green Chillies – 2, chopped
Bay Leaf – 2
Coconut Milk – 1 cup
Cardamoms – 3
Onions – 2, chopped
Cinnamon – 4
Cloves – 4
Cashewnuts – 20
Coriander Leaves – 1/4 cup, chopped
Mint Leaves – 1/4 cup, chopped
Lemon Juice – 2 tsp
Cumin Seeds – 1 tsp
Ghee as required
Salt as per taste

Method:
1. Heat ghee in a pan.
2. Add the vermicelli and fry till golden.
3. Remove.
4. In the same pan, fry the cumin seeds, cloves, cardamoms and cinnamon.
5. Grind to a powder.
6. Add some more ghee to the pan.
7. Saute the onions and green chillies.
8. Add vermicelli and coconut milk.
9. Stir well.
10. Add salt and cook for 2 minutes.
11. Add the ground powder and stir.
12. Add lemon juice, coriander leaves, mint leaves and cashewnuts.
13. Mix well and serve with onion raita.

    You can use standard Britannia cheese that you get in the super market.
