Singapore Crab Noodles


Singapore Crab Noodles

Plain Noodles – 150 gms, soaked and drained
Spring Onions – 3 to 4, finely slices
Crabmeat – 200 gms
Beansprouts – 250 gms
Eggs – 2, medium, beaten
Peanuts – 2 tblsp, roasted, chopped
Soy Sauce – little
Red Chillies – 2, finely chopped
Turmeric Powder – 1/4 tsp
Black Pepper Powder as per taste
Oil as required

1. Heat little oil in a pan over medium flame.
2. Add turmeric powder and spring onions.
3. Stir-fry for a minute.
4. Add the beansprouts, red chillies and cook for a minute.
5. Add the noodles and beaten eggs.
6. Stir and cook for 2 minutes.
7. Add soy sauce and pepper powder.
8. Add the crabmeat and cook for 2 to 3 minutes longer.
9. Transfer to a serving dish.
10. Garnish with the peanuts.
11. Serve.
