A Collins is a tall, iced cocktail, perfect for drinking on a long summer’s afternoon. This version is even cooler, with old world minty charm.
Ingredients:
- Gin – 1 part
- Lemon Juice – 1/2 part
- Sugar Syrup – 1/2 tsp
- Mint Sprig – 1
- Crushed Ice
- Sparkling Water
Method:
- Crush the mint sprig and place in a tall chilled tumbler.
- Add 5 crushed ice cubes.
- Pour the gin, lemon juice and sugar syrup.
- Top up with sparkling water.
- Stir gently and garnish with a mint sprig.
- Serve.
