Cashew Cake Recipe

Cashew Sweet
Ingredients:
Cashewnuts – 1 cup, soaked in water for 2 hours
Sugar – 4 cups
Coconut – 1/2, grated
Ghee – 1 1/2 tblsp
Cardamom Powder – 1/4 tsp
Saffron Strands – few, soaked in 1 tblsp milk (optional)

Method:
1. Grind the soaked cashewnuts and coconut together to a smooth paste.
2. Heat ghee in a pan.
3. Add the ground paste and sugar.
4. Stir well.
5. Cook till the mixture starts to thicken.
6. Add cardamom powder and saffron strands.
7. Transfer to a greased plate.
8. Keep aside to cool.
9. Before it cools completely, cut into desired shapes.

This is actually a popular sweet in South India.
