Ingredients:
Tortillas – 4
Cheddar Cheese – 100 gms, grated
Green and Red Capsicums – 150 gms, finely chopped, boiled
Cumin Powder – 1 tsp
Coriander Powder – 1 tsp
Paprika – 1 tsp
Black Pepper Powder – 1/4 tsp
Oregano – 1/4 tsp
Salt – 1/4 tsp
Spring Onions – 2, finely sliced
Coriander Leaves – handful, chopped
Olive Oil – little
Method:
1. In a large bowl mix the cheese, capsicums, spices, spring onions and coriander leaves.
2. Heat a non-stick tawa over medium flame.
3. Place 1 tortilla and spread 1/2 of the cheese-capsicum mixture.
4. Place another tortilla on top and cook until the cheese has melted, turning once or twice.
5. Remove and cut into wedges.
6. Serve warm at once.
