Stir-fried Noodles and Bean Sprouts

Stir-fried Noodles and Bean Sprouts

Cellophane Noodles – 100 gms
Small Onion – 1, finely chopped
Light Soy Sauce – 1 1/2 tblsp
Red Chilli – 1, small, finely sliced
Water – 50 ml
Bean Sprouts – 75 gms
Coriander Leaves – 1 bunch, chopped
Peanuts – 1 tblsp, roasted, crushed
Oil as required
Black Pepper Powder as required

1. Soak the noodles in warm water for 30 minutes.
2. Drain and cut them into small pieces.
3. Heat oil in a pan over medium flame.
4. Saute the onions for 2 to 3 minutes.
5. Add the noodles, soy sauce and stir-fry for a minute or two.
6. Add the chilli, water and bean sprouts.
7. Cook for a minute and remove from flame.
8. Add the coriander leaves and peanuts.
9. Serve at once.
