Grilled Vegetable Kebabs

Brinjal – 1, cut into 1 inch pieces
Onion – 1, cut into wedges
Sweet Corn – 1, cut into 1 inch pieces
Cherry Tomatoes – 4, halved
Capsicum – 1, cut into 1 inch pieces
Cucumber – 1, sliced into 1 inch pieces
Dijon Mustard – 1 tsp
Honey – 1 tblsp
Olive Oil – 2 tblsp
Salt as per taste
Black Pepper Powder as per taste
Wooden Skewers – soaked in water for 30 minutes

1. Mix the honey, mustard and olive oil in a bowl.
2. Add salt and black pepper powder.
3. Stir well.
4. Skewer the vegetables and brush with the honey-mustard mixture.
5. Cook for 30 minutes in a preheated oven at 180C/350F, brushing with the honey-mustard mixture from time to time.
6. Remove and serve hot.
