Thai Rice Pulao

Ingredients:
Basmati Rice – 2 cups, cooked
Pineapple – 2 cups, chopped
Carrot – 2 cups, finely chopped
Coriander Leaves – 2 cups, chopped
Spring Onions – 4, finely sliced
Peanuts – 1/4 cup, unsalted, chopped
Red Chilli Flakes – 2 tsp
Sugar – 2 tsp
Thai Fish Sauce – 3 tsp
Sunflower Oil – 3 to 4 tsp
Lime Juice – 1/4 cup
Water as required

Method:
1. Combine the lime juice, sunflower oil, fish sauce, sugar and red chilli flakes in a bowl.
2. Add the rice, chopped pineapple, carrot, spring onions and coriander leaves.
3. Mix until evenly blended.
4. Garnish with the peanuts.
5. Serve.

Tip: Add peas, cucumber or any other vegetable as desired.
