Ingredients:
Dried Chinese Mushrooms – 45 gms
Chicken Stock – 2 1/2 cups
Chicken Breasts – 500 gms, skinless, boneless, finely sliced
Plain Noodles – 175 gms
Sweet Corn – 100 gms
Method:
1. Pour 1 1/2 cups of hot water into a pan.
2. Add the mushrroms and soak for 30 minutes.
3. Remove the mushrooms and transfer the water to a large pan.
4. Add the chicken pieces and bring to a boil. Remove and keep aside.
5. Break the noodles and add to the pan.
6. Simmer over low flame for 2 to 3 minutes.
7. Finely chop the mushrooms and add to the pan.
8. Add the sweet corn and bring to a gentle boil.
9. Serve hot.
