Homemade Vadi (Dried Lentil Fritters)

Ingredients:
Urad Dal – 500 gms, washed, soaked, drained, rinsed
Fenugreek Powder – 2 to 3 tsp
Red Chilli Powder – 2 to 3 tsp
Garam Masala Powder – 2 to 3 tsp
Asafoetida Powder – a pinch
White Pumpkin – 250 gms, grated and squeeze dried
Ginger – 75 gms, grated
Coriander Leaves – few, chopped

Method:
1. Grind the urad dal to a smooth consistency.
2. Add all the other ingredients and mix well.
3. Shape into balls and place them on a clean, white cloth.
4. Place them under the sun for 2 days to dry.
5. Alternatively place them in a oven at 100C for 4 to 5 hours and remove. Keep them aside for 8 hours to dry.
6. Once fully dried, remove and store them in a clean jar.
7. Use as required.
