Masala Peanuts Biryani Recipe

Basmati Rice – 1 cup, cooked
Masala Peanuts – 1 cup
Roasted Peanuts – 1/4 cup, powdered
Kopra – 1/4 cup, gratedd
Dry Red Chillies – 6
Coconut Oil – 2 tblsp
Cinnamon – 1 inch piece
Bay Leaf – 1
Cardamom – 2
Bengal Gram Dal – 1/4 tsp
Urad Dal – 1/4 tsp
Saunf – 1/2 tsp
Turmeric Powder – a pinch
Curry Leaves – few
Salt as per taste

1. Heat little oil in a pan.
2. Fry the dry red chillies and kopra for a minute or two.
3. Remove and cool. Then grind to a powder.
4. Add the remaining oil to the pan.
5. Add cinnamon, bay leaf, saunf, cardamoms, curry leaves, urad dal, bengal gram dal and turmeric powder for a minute.
6. Add the ground kopra powder and salt.
7. Stir well.
8. Add the masala peanuts and mix well.
9. Add rice and mix until evenly combined.
10. Add the powdered peanuts and stir gently.
11. Serve.
