Olive Bruschetta Recipe

Olive Bruschetta

Cherry Tomatoes – 1 cup, chopped or quartered
Carrot – 1/4 cup, finely chopped
Olives – 2 tblsp, sliced
Parsley – 1 tblsp, finely chopped
Onions – 3 to 4 tblsp, chopped
Garlic – 1/2 tsp, minced
Extra-Virgin Olive Oil – 1 1/2 tblsp
Balsamic Vinegar – 1 tblsp
Salt as per taste
Black Pepper Powder as per taste
French Baguette – 1, small, sliced, toasted
Parmesan Cheese – 1/4 cup, grated, to garnish (optional)

1. Combine the tomatoes, carrot, olives, parsley, onions and garlic in a bowl.
2. Whisk the oil, vinegar, pepper and salt in another bowl.
3. Pour over the olive mixture and toss well.
4. Place the toasted baguettes on a serving tray.
5. Spoon over 1 or 2 tblsp of the olives.
6. Garnish with the cheese if using.
7. Serve at once.
