Prawn and Avocado Salad

Prawns – 10 to 12, peeled, deveined
Asparagus – 5, halved, blanced, refreshed
White Radish – 1, large, finely sliced
Avocado – 1, chopped
Lettuce Leaves – 1 cup, chopped
Extra-Virgin Olive Oil – 50 ml
Lemon Juice – 1 tblsp
Garlic Mayonnaise – 3/4 tblsp

1. Combine the prawns, asparagus, radish, avocado and lettuce in a bowl.
2. Add mayonnaise and mix well.
2. Mix the olive oil and lime juice together.
3. Drizzle the dressing over the salad.
4. Serve.
