Allam Pachadi (Ginger Chutney) is a popular dish from Andhra. Usually served as a side dish to Idli or Dosa.
Ginger – 1/2 cup, peeled, chopped
Dry Red Chillies – 2
Tamarind – a small ball
Jaggery – little
Gingelly Oil – 3 tsp
Salt as per taste
Roast and grind to a powder:
Mustard Seeds – 1 tsp
Fenugreek Seeds – 1 tsp
1. Combine the ginger, red chillies, salt and jaggery with tamarind extract.
2. Add a little water and grind together.
3. Heat oil in a pan.
4. Add the ground ginger mixture, ground powder and saute well until the raw smell disappears.
5. Remove and transfer to a serving dish.
