Beetroot Asoka Halwa

Ingredients:
Beetroots – 500 gms
Sugar – 125 gms
Ghee – 50 gms
Cardamom Powder – 1/2 tsp
Cashewnuts – 5, fried in little ghee
Khoya – 50 gms
Moong Dal – 50 gms
Wheat Flour – 2 1/2 tsp

Method:
1. Peel the beetroots and grate well.
2. Heat 1/2 of the ghee in a pan.
3. Saute the beetroots and add 1 cup of water.
4. Cook till 3/4ths done and remove.
5. Dry roast the moong dal and cook till mushy.
6. Dry roast the wheat flour and add to the dal.
7. Add sugar, khoya and ghee.
8. Stir well and add the beetroots.
9. Add cardamom powder and cashewnuts.
10. Remove when it reaches a halwa consistency.
11. Serve.
