A popular 18th century cocktail celebrating the new abundance of citrus fruits.


  • Egg White – 2
  • Icing Sugar – 3 to 4 tsp
  • Allspice Powder – little
  • Juice of 1/2 Lemon
  • Juice of 1 Orange
  • White Rum – 2 parts
  • Ice


  1. Dip the rim of the glass into egg white and then into a mixture of sugar and allspice.
  2. Keep aside to dry.
  3. Shake together the lemon juice, orange juice and rum with the remaining sugar until the sugar has dissolved.
  4. Pour over ice into the cocktail glass.
  5. Sprinkle a little allspice on top.
  6. Serve.
