A popular 18th century cocktail celebrating the new abundance of citrus fruits.
- Egg White – 2
- Icing Sugar – 3 to 4 tsp
- Allspice Powder – little
- Juice of 1/2 Lemon
- Juice of 1 Orange
- White Rum – 2 parts
- Dip the rim of the glass into egg white and then into a mixture of sugar and allspice.
- Keep aside to dry.
- Shake together the lemon juice, orange juice and rum with the remaining sugar until the sugar has dissolved.
- Pour over ice into the cocktail glass.
- Sprinkle a little allspice on top.
