Dark rum is rich in flavour and redolent of sunshine holidays.
- Jamaican Rum – 4 parts
- Soda Water as required
- Juice of 1 Lime
- Mint Leaves
- Sugar Syrup – 2 tsp
- Angostura Bitters – 2 dashes
- Add the sugar syrup, lime juice and mint leaves to a cocktail glass.
- Crush lightly and add the ice cubes.
- Pour the rum in and top up with soda water.
- Add a dash or two of the Angostura bitters.
- Garnish with some mint leaves.
