250 gms medium sized purple brinjals
1 tsp turmeric powder
1 tsp coriander powder
1 tsp chilli powder
1/2 tsp garam masala
Salt to taste
1 tsp mustard seeds
1 tsp cumin seeds
coriander leaves for garnish
4 tbsp Oil
Pinch of hing
Cut the two ends of brinjal and slice them into 1 cm rounds
Marinate them with turmeric powder , coriander powder and salt and leave aside for 15 mins.
Heat oil in a kadhai
Add mustard and cumin seeds.
Add the marinated brinjals and fry
Do not over stir them or else the brinjals will be smashed.
Cover and cook
When the brinjals are cooked add chilli powder garam masala & hing and saute for a min.
Garnish with coriander leaves and serve hot with phulkas
