You’ll need a batch of easy-to-make Rhubarb Elixir for this unusual drink
Ingredients:
2 cups ice
1 ½ cups Rhubarb Elixir
4 ounces white rum
Juice of 1 lime
1 teaspoon superfine sugar
Method:
1. Combine all the ingredients in a blender.
2. Cover and pulse on and off until the mixture starts to swirl evenly.
3. Blend on high for 20 seconds, or until the drink is completely smooth.
Variations
Cherry Rhubarb Daiquiri Add ½ cup frozen cherries, pitted, and 2 tablespoons cherry liqueur (such as Heering) before blending.
Raspberry Rhubarb Daiquiri Add ½ cup frozen raspberries and 2 tablespoons raspberry liqueur (such as Chambord or crème de framboise) before blending.
Strawberry Rhubarb Daiquiri Add 6 large frozen strawberries and 2 tablespoons grenadine syrup before blending.
