Apricot liqueur adds a rich apricot flavour to this drink, but you may substitute apricot brandy if you desire. The drink will taste stronger and won’t be quite as sweet.
INGREDIENT:
2 cups ice
3/4 cup canned apricot halves, drained and semi frozen
3 ounces gold rum
2 ounces apricot liqueur
Juice of 2 limes
2 teaspoons superfine sugar
METHOD:
1. Combine all the ingredients in a blender.
2. Cover and pulse on and off until the mixture starts to swirl evenly.
3. Blend on high for 20 seconds, or until the drink is completely smooth.
Variations:
ALMOND APRICOT DAIQUIRI Omit the apricot liqueur. Add 2 ounces almond liqueur (such as amaretto) before blending.
CHERRY APRICOT DAIQUIRI Reduce the apricot halves to ½ cup and reduce the apricot liqueur to 1 ounce. Add ½ cup semi frozen, pitted cherries and 1 ounce cherry liqueur before blending.
HERBAL APRICOT DAIQUIRI Omit the gold rum and apricot liqueur. Add 3 ounces spiced rum (such as Captain Morgan) and 2 ounces herbal liqueur before blending.
LEMON APRICOT DAIQUIRI Omit the apricot liqueur and lime juice. Add 2 ounces lemon liqueur and the juice of 1 large lemon before blending.
