So called because it resembles the color of a mimosa’s attractive yellow bloom.
INGREDIENT:
Juice of 1 passion fruit
½ measure orange Curacao
Crushed ice
Champagne, chilled
Slice of star fruit and twist of peel, to decorate
METHOD:
1. Scoop out the passion fruit flesh into a jug or shaker and shake with the Curacao and a little crushed ice until frosted.
2. Pour into the base of a champagne glass and top up with champagne.
3. Dress with fruit.
