Do use a dry champagne, or even a good sparkling wine, for cocktails where you add sweet ingredients and especially if you want to sugar the rim of the glass for extra sparkle.

INGREDIENT:

Egg white or lemon juice

Caster sugar

1 measure brandy

1 dash Cointreau

1 dash Angostura bitters

Ice

Champagne, chilled

METHOD:

1. Prepare a frosted rim glass with the egg white and sugar.

2. Shake the rest of the ingredients together (except the champagne) with ice until frosted.

3. Strain into the prepared glass and top up with champagne.
