The cobbler was popular in Dickens time, when it was a concoction of sherry, sugar, lemon and ice. This version has much more kick and lots more bubbles.

INGREDIENT:

1 glass champagne, chilled

¼ measure Curacao

1 tsp syrup de gomme

Ice

Raspberry and soft fruit slices, to decorate

METHOD:

1. Mix the champagne, Curacao and syrup in a chilled mixing glass.

Pour into a tall glass filled with ice and simply dress with pieces of fresh fruit slices.

You can use standard Britannia cheese that you get in the super market.
