Polynesian Pepper Pot

It may seem strange to make a sweet drink and then season it with pepper and spices, but there is a long and honorable culinary tradition of making the most of the slightly acerbic flavor of pineapple in this kind of way.

INGREDIENT:

4-6 cracked ice cubes

Dash of Tabasco sauce

2 measures vodka

1 measure golden rum

4 measures pineapple juice

½ measure orgeat

1 tsp lemon juice

¼ tsp cayenne pepper

Punch of curry powder, t decorate

METHOD:

1. Put the cracked ice cubes into the cocktail shaker. Dash Tabasco sauce over the ice. Pour in the vodka, rum, pineapple juice, orgeat and lemon juice and add the cayenne. Shake vigorously until a frost forms.

2. Strain into a chilled glass and sprinkle curry powder on top.
