This is one of many cocktails that has changed from its original recipe over the years. To begin with, it was always rum-based and did not include any fruit juice. Nowadays, it is increasingly made with tequila, because this has become better known outside its native Mexico.
INGREDIENT:
10-12 cracked ice cubes
2 measures white rum
½ measure triple sec
½ measure lime juice
1 tsp sugar syrup
1 egg white
Sprig of fresh mint, to decorate
METHOD:
1. Put 4-6 cracked ice cubes into a cocktail shaker.
2. Pout the rum, triple sec, lime juice and sugar syrup over the ice and add the egg white. Shake vigorously until a frost forms.
3. Half fill a chilled highball glass with cracked ice cubes and strain the cocktail over them.
4. Decorate with the mint sprig.
