Ridge Gourd / Peerkangai

Ingredients:
Rajma – 1 cup, soaked overnight and boiled
Toor Dal – 1 cup, boiled
Peerkangai (Ridge Gourd) – 1, cleaned, chopped
Carrot – 2, finely chopped
Tamarind Extract – 1 cup
Sambar Powder – 2 tblsp
Onion – 1, chopped
Tomato – 1, chopped
Vendhaya Keerai – handful, chopped
Salt as per taste
Mustard Seeds – little
Oil as required

Method:
1. Heat little oil in a pan.
2. Fry the mustard seeds for 20 seconds.
3. Add the onions, tomatoes and carrot.
4. Saute well.
5. Add tamarind extract, sambar powder, peerkangai and salt.
6. Add the dal, rajma, keerai and bring to a boil.
7. Simmer for 2 to 3 minutes.
8. Serve hot.
