Bitter Gourd (Pavakkai) Varuval

Bitter Gourd

Bitter Gourd – 250 gms
Juice of 1/2 Lemon
Salt – 2 tblsp
Red Chilli Powder – 1 1/2 tblsp
Gram Flour – 1 tblsp
Rice Flour – 1 tblsp
Turmeric Powder – 1/4 tsp
Oil – 250 ml

1. Remove the seeds and slice the bitter gourds into small rounds.
2. Add 1/2 tblsp salt, turmeric powder and lemon juice.
3. Mix well and keep aside for 30 minutes.
4. Mix the remaining salt, red chilli powder, rice flour and gram flour in a bowl.
5. Squeeze the bitter gourds and dredge them in the flour mixture.
6. Heat oil in a pan.
7. Fry the bitter gourds till light golden.
8. Remove and drain excess oil.
9. Serve.
