Pastry 150 gm flour
75 gm diced chilled butter
1 egg yolk
2 tbsp cold water
3 tbsp sliced spring onions
25 gm butter
250 ml cream/milk
? tsp mustard powder
50 gm grated cheese
salt and pepper to taste
1/2 kg spinach leaves – blanched and pasted
To prepare pastry, rub butter into the flour till the mixture resembles breadcrumbs.
Bind with egg yolk and water. Knead lightly. Chill and roll out to line an 8″ round flan dish.
For the filling, soften the onions in butter for 1 minute.
Combine eggs and yolks, Cream and remaining ingredients. Season well.
Pour into the pastry case and bake at 190 degrees C until filling is firm to the touch.
