Ginger Chutney

Ginger
Ingredients:
Ginger – 1 cup, cleaned, peeled, chopped
Garlic – 20 cloves
Dry Red Chillies – 10
Tamarind – a lemon sized ball, seedless
Mustard Seeds – 1/4 tsp
Urad Dal – 1/4 tsp
Jaggery – a small piece
Oil – 2 tblsp
Salt as per taste

Method:
1. Heat 1 tsp oil in a pan.
2. Fry the ginger, garlic, red chillies, tamarind and salt for a minute.
3. Remove and cool.
4. Add salt, jaggery and a little water.
5. Grind to a smooth paste.
6. Heat the remaining oil in the pan.
7. Fry the mustard seeds and urad dal for 45 seconds.
8. Add to the chutney.
9. Serve with rice.
