Coconut Milk Dosas Recipe

1 cup rice
1/3 cup urad dal
2 cups coconut milk
1/2 tsp fenugreek seeds
1/3 cup curds
1/2 tsp soda bicarbonate
Salt to taste
Oil to shallow fry


Wash and soak the rice and dhal together. Add fenugreek seeds and soak for 6-7 hours or overnight.
To prepare coconut milk, put the grated coconut in a blender. Repeat with the same residue. Restrain. Add water and blend till smooth. Strain. Use this milk to grind the dosa batter. Add curds, soda, salt and mix well. Keep aside for 3-4 hours.

Heat the griddle, pour 1 spoon of batter. Proceed as for plain dosa. Even thick dosas may be made from the same batter, if desired. Serve hot with coconut or onion chutney.
