Coconut Milk Rice Recipe

Coconut Milk
Ingredients:
Basmati Rice – 1 cup
Coconut – 1/2
Onion – 1, finely chopped
Green Chillies – 3, finely chopped
Cinnamon – 1/2 inch piece
Clove – 1
Saunf – few
Coriander Leaves – few, chopped
Salt as per taste
Oil as required

Method:
1. Grind the coconut and extract milk.
2. Soak the rice for 10 minutes in a bowl.
3. Heat oil in a pressure pan.
4. Add cinnamon, clove, saunf, onions and green chillies.
5. Saute well for a minute or two.
6. Add the rice and stir-fry for another minute.
7. Mix coconut milk with water to make it 2 cups and add to the rice.
8. Add salt and coriander leaves.
9. Mix well and pressure cook till 3 whistles.
10. Remove and serve hot.
