Office goers, I hear ya all. I know you guys are fed up reading all the nutritious facts about fruits and veggies and taking care of hydration for the summer. So, are we. Do you all need something more practical, huh?
Well, the most practical and most expensive solution would be to drop into a KFC outlet or McDonalds. And I would also say most unhealthy too, if done everyday. So, why don’t we whip up our everyday meal, the second most important meal of the day at home and do it in an interesting way, customized to suit our own palette.
Being an Indian, I would broadly classify the lunch boxes into rice lovers’ lunch boxes and not. So, what do we have for rice lovers? Firstly, if you are not a very early morning person, boil the rice overnight itself. The next morning, you would have ten minutes to make lemon rice or tamarind rice or tomato rice or coriander rice or vegetable rice. You could have tomato paste, tamrind paste and lemon juice extracted ready the previous night itself. So, it is just a matter of 2 to 5 minutes to heat the tawa, mix rice with the afore mentioned and garnish it suitably. Check out all the rice items here for which rice could be boiled overnight itself. Sauce or chutney or chips or papads would go well with such mixed rice.
You could always have a box of sliced carrots, cucumber, tomatoes, cabbage leaves ready. You could carry them no matter what your lunch consists of. They not only serve as a pseudo side dish but also a great nutritious and calorie bursting snack. Also check out all the salads posted here. Half of them can be whipped up in 5 minutes.
You could boil vegetables overnight and refrigerate it. In the morning, just grind coconuts and green chillis and mix it with a few table spoon of curd and mix in the boiled veggies. Your mini aviyal is ready. Or you could just mix the boiled veggies with the rice, season it with salt, spices, and garnish it suitably with a few spoons of ghee and fry it for 2 minutes. Your fried rice is ready. Rice lovers can have a field day actually during lunch and actually not miss any of their favorite cuisines.
Sundal is a very healthy dish and high in protein. There are more than a dozen sundal varieties in your site itself here. A cup of sundal along with rice or roti is very healthy and very filling. Just a cup of sundal is a very good routine breaker.
I would not disappoint the bread lovers either. For the Indian bread lovers, rotis, naans and chapathis with elaborate side dishes are not easy to prepare in the early morning hectic hours. So, if you had planned to have them for dinner, prepare an extra cup of side dish. And while kneading the dough, knead an extra handful of flour. The left over dough could be refrigerated and used the next day to make a couple of rotis. Just heat the side dish and use it for next day’s lunch. If there is no side dish, you could just make chapathis or rotis and have them with pickles, raitas, that box of salad, or with jams. My toddler loves rotis with just sugar and ghee. I don’t have to think about side dish if I am strapped for time. Lucky me, huh?!
There is always that quick sandwich into which you can stuff any raw veggies like tomatoes, lettuce, cabbages, onions, boiled potatoes, salt them, butter them, chutney them or sauce them. But do not try this often if you are a picky eater or you would get bored soon enough.
If you love those McDonalds veggie burgers, here is your quicky. Boil mushrooms, corns, carrots, chickpeas, garlic, onions and mash them all together with salt and spices. Mix them all and make small balls and serve them with the burger bap or pitta. You can have raw sliced onions, carrots, cucumber to go with them and ofcourse ketchup.
Apart from these all, there are atleast 50 different kinds of soups, 100 different kinds of salads on our site, sandwiches, countless curries and gravies which can be used for both rice and breads, fruit snacks, vegetable snacks, home made potato wedges. Left overs from yesterday’s dinner need not be discarded. Refrigerate it and use it the next morning with a fine imagination.
The most creative skill since time immemorial is the culinary skill. Use your creative juices and if you can whip up a healthy meal in not more than 5 minutes, we would love to post about it with due credits to you.
