Tender Coconut Delight Recipe

Tender Coconut
Ingredients:
Water and shavings from 2 Tender Coconuts
Milk – 500 ml
Pistachios – few, crushed
Sugar – 1/2 cup

Method:
1. Grind the tender coconut water and the shavings together in a mixie.
2. Add sugar with milk and bring to a boil.
3. Simmer till it reduces to 1/2 of its quantity.
4. Remove and cool.
5. Add the tender coconut and mix well.
6. Garnish with pistachios.
7. Serve chilled.
