Oriental Fruit Salad with Chicken Recipe

Oriental Fruit Salad
Ingredients:
Chicken Breasts Fillets – 2
Juice of 1/2 Lemon
Dried Mixed Herbs – 1 tsp
Salt as per taste
Pepper Powder as per taste
Green Apple – 1, halved, seeded, finely sliced
Lettuce – 1, torn into small pieces
Egg – 1, hard-boiled, sliced
Wonton Wrappers – 3, sliced into strips and deep-fried
Oranges – 2, small, segmented

For the dressing:
Lemon Juice – 3/4 cup
Honey – 1 tsp
Coriander Leaves – 1 tblsp, finely chopped
Extra-Virgin Olive Oil – 2 tblsp
Salt as per taste

Method:

1. Mix the juice of 1/2 lemon, dried mixed herbs, salt and pepper in a bowl.
2. Add the chicken breast fillets and marinate for 30 minutes.
3. Heat a pan over medium flame.
4. Fry the marinated chicken fillets for 15 minutes or until cooked and browned.
5. Slice the cooked chicken and keep aside in a warm place.
6. Combine all the dressing ingredients in a bowl.
7. In a large bowl, combine the lettuce, apples, oranges, sliced eggs, chicken and toss well.
8. Add the dressing, fried wonton strips and toss well.
9. Serve at once.
