Vegetable Biryani Recipe

Ingredients:
Basmati Rice - 2 cups
Potatoes - 2
Carrot - 1
Beetroot - 1
Green Peas - 100 gms
Beans - 50 gms
Onions - 2
Cauliflower - 1/2 cup, chopped
Garlic Flakes - 5
Tomatoes - 2
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Ghee - 2 tblsp
Garam Masala Powder - 1/2 tsp
Cashewnuts - 8
Cherry Tomatoes - 6, chopped to 1/8th size
Salt to taste
Bread - 3 slices (optional)
Bay Leaf - 1
Turmeric Powder - 1/4 tsp

Method:
1. Chop all the vegetables.
2. Clean and fry the basmati rice in ghee for 2 minutes and remove it from pan.
3. Pour some ghee and fry the cashewnuts.
4. Make small pieces of bread and fry them in ghee. Remove them from pan.
5. Pour the remaining ghee and fry the chopped vegetables.
6. Add salt, chilli powder, garam masala, bay leaf and turmeric powder along with rice and cook them in a pressure cooker.
7. For one cup of rice, use 2 cups of water.
8. When done, garnish with coriander leaves, fried bread pieces and cashewnuts.
9. Serve hot with raita and appalam.
