Ingredients

  • 3 Tomatoes chopped
  • 250 g Brinjal chopped
  • 250 g Small Onions chopped
  • 10 Garlic Cloves peeled, finely chopped or minced
  • 1 cup Tamarind Extract
  • 1/2 cup Oil
  • 1 tsp Mustard Seeds
  • handful Curry Leaves
  • 1/2 tsp Asafoetida Powder
  • 1/2 tsp Fenugreek Seeds
  • 1 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Pepper Powder
  • 4 tsp Red Chilli Powder
  • as per taste Salt
  • few Coriander Leaves chopped

Fry in little oil and grind to a paste:

  • 1/2 Coconut grated
  • 1/2 tsp Saunf
  • 1/2 tsp Cumin Seeds
  • 1/2 tsp Gasa Gasa

Instructions

  • Heat oil in a pan.
  • Fry the curry leaves, mustard seeds, asafoetida and fenugreek for a minute.
  • Add the small onions and garlic.
  • Fry till onions turn light brown.
  • Add tomatoes and saute for a minute or two.
  • Add the ground paste and stir to mix well.
  • Add the masala powders and pour the tamarind extract.
  • Add salt and mix well.
  • Add the brinjals and bring to a boil.
  • Cover the pan with a lid and simmer over low flame for 5 minutes or until the brinjals are tender.
  • Garnish with coriander leaves.
  • Serve hot with rice or as a side dish with idli, dosa or appam.
