Gazpacho Salad Recipe

Ingredients:

  • Tomatoes – 3, deseeded and diced
  • Red Capsicum – 1, diced
  • Green Capsicum – 1, diced
  • Cucumber – 1, deseeded and diced
  • Onion – 1, diced
  • Garlic Cloves – 1 to 2, finely chopped
  • Parsley – 3 tblsp, chopped
  • Mint – 2 tblsp, chopped
  • Red Wine Vinegar – 1 1/2 tblsp
  • Fruity Olive Oil – 1/4 cup
  • Salt as per taste
  • Ground Black Pepper as required

Method:

  1. Mix the tomatoes, capsicum, cucumber and onion in a salad bowl.
  2. Add garlic, parsley, mint, red wine vinegar and olive.
  3. Mix well.
  4. Season with salt and pepper.
  5. Cover and refrigerate for 3 to 4 hours before serving.
