Chilled Berry Breakfast Salad Recipe

Ingredients:

  • Small Strawberries – 225 gms, halved
  • Raspberries – 150 gms
  • Blackberries – 125 gms
  • Blueberries – 125 gms
  • Finely grated Rind of 1 Orange
  • Orange Juice – from 1 Orange
  • Caster Sugar – 1 tblsp
  • Greek Yogurt – 6 tblsp
  • Orange Blossom Honey – 1 tblsp
  • Sunflower Seeds – 1 tblsp
  • Hazelnuts – 1 tblsp, toasted and chopped

Method:

  1. Place all the berries in a shallow bowl.
  2. Stir in the orange juice and sugar.
  3. Cover and chill in the refrigerator for at least 2 hours or overnight.
  4. Put the yogurt in a small bowl and fold in the orange rind and honey.
  5. Divide the chilled salad between 4 bowls.
  6. Top each with a dollop of the yogurt.
  7. Sprinkle with the sunflower seeds and hazelnuts.
  8. Serve immediately.
