Salami Pasta Salad Recipe

Ingredients:

  • Dried Penne Pasta – 350 gms
  • Pesto Sauce – 2 tblsp
  • Olive Oil – 3 tblsp
  • Orange Pepper – 1, deseeded and diced
  • Yellow Pepper – 1, deseeded and diced
  • Red Onion – 1, finely diced
  • Black Olives – 85 gms, stoned
  • Cherry Tomatoes – 115 gms, halved
  • Milano Salami – 175 gms, cut into small chunks
  • Mozzarella Cheese – 125 gms, torn into small pieces
  • Salt and Pepper – as required
  • Fresh Basil Sprigs – to garnish

Method:

  1. Bring a large saucepan of lightly salted water to the boil.
  2. Add the pasta and return to the boil.
  3. Cook for 10-12 minutes until just tender.
  4. Drain the pasta well and transfer to a bowl. Mix together the pesto sauce and olive oil and stir into the hot pasta.
  5. Leave to cool, stirring occasionally.
  6. Add the peppers, onion, olives, tomatoes, salami and mozzarella cheese to the pasta and toss well to mix.
  7. Season to taste with salt and pepper.
  8. Serve garnished with the basil sprigs.
