Ingredients:
2 Cup cooked rice
1-2 Bunches mint leaves
3 tbsp lemon juice
Bay leaves
1-2 Green chillies
Salt
Turmeric
Oil
1/4 tsp chanadal
1 tsp Peanuts
1/4 tsp urad dal
Few mustard seeds
Coriander leaves
Method:
1. Put mint in a food processor and process to a smooth paste.
2. Heat oil add urad dal, chana dal, mustard seeds, peanuts, when they turn brown, add mint paste, green chillies bay leaves and fry for 3-4 minutes
3. Add cooked rice to the seasoning prepared in step 2, add salt and simmer for 2-3 minutes.
4. Remove from heat and add lemon juice to the rice and mix well.
5.Garnish with coriander leaves.
