Gajar Ka Halwa Recipe
Ingredients:
Carrots - 1 kg, washed, peeled, shredded
Milk - 3 cups
Sugar - 1/2 cup
Brown Sugar - 5 1/2 tbsp
Green Cardamom powder - 1 tsp
Clarified Butter - 5 tbsp
Almonds - 2 tbsp, slivered
Raisins - 2 1/2 tbsp
Walnuts - 2 1/2 tbsp, chopped
Cloves - 1/4 tsp, ground
Nutmeg - 1/4 tsp, ground
Cinnamon - 1/4 tsp, ground
Method:
1. Mix the carrots and milk in a pan and bring to boil.
2. Reduce the heat to moderate and cook for 20 to 25 minutes, stirring continuously, till the mixture is nearly dry.
3. Add both the sugars and half of the green cardamom powder, stirring continuously.
4. Cook for 10 to 15 minutes.
5. Remove the pan from the heat and keep aside.
6. Heat the clarified butter in another pan over moderate heat.
7. Fry the almonds until golden.
8. Stir in the carrot mixture and the raisins, walnuts and ground spices.
9. Cook till the mixture begins to separate from the sides.
10. Serve hot, garnished with remaining cardamom powder.
