Mutton Seekh Gilafi Recipe

Mutton Kebab
Ingredients:
Mutton Mince – 250 gms
Mutton Fat (Charbi) – 15 gms
Garlic – 1 tblsp, chopped
Ginger – 1 tsp, finely grated
Fenugreek Powder – 1 tblsp
Green Chillies – 1 tsp, finely chopped
Coriander Powder – 1 tsp
Jeera Powder – 3/4 tsp
Kashmiri Red Chilli Powder – 1 tsp
Garam Masala Powder – 1/2 tsp
Black Salt – 1/4 tsp
Egg White – 1/2
Cheese – 1/4 cup, grated
Butter – 1 tblsp
Red Capsicum – 1 tblsp, finely chopped
Green Capsicum – 1 tblsp, finely chopped
Onion – 1/2, finely chopped
Mace Powder – 1/8 tsp
Black Cardamom Powder – 1/8 tsp
Green Cardamom Powder – 1/4 tsp
Chaat Masala Powder – 1 1/2 tsp
Lemon Juice – 2 tblsp
Nutmeg Powder – a small pinch
Besan Flour – 2 1/2 tblsp, dry roasted
Clove Powder – a small pinch
Pomegranate Powder – 3/4 tsp
Salt – 1/4 tsp
Black Pepper – 1/2 tsp, crushed
Coriander Leaves – 2 tblsp, finely chopped

Method:
1. Combine the mutton mince and fat together in a bowl.
2. Grind them till smooth.
3. Add egg, cheese and butter.
4. Mix till smooth.
5. Add the onions and capsicums in a bowl. Squeeze dry and add to the mutton mixture.
6. Add besan and all the other ingredients.
7. Mix well and keep aside for an hour.
8. Make small balls of the mixture and press them on a skewer.
9. Shape them into a medium shape kebab.
10. Repeat till all the mixture has been skewered.
11. Place the skewers in a preheated oven at 180C and cook for 12 to 15 minutes.
12. Rotate the skewers and cook for another 3 to 4 minutes.
13. Remove the kebabs from skewers.
14. Serve hot/warm.
