Ingredients:
Mussels - 2kg, soaked and cleaned
Thai Basil Leaves - handful

For the Dipping Sauce:
Lime Juice - 1/2 cup
Fish Sauce - 2 tsp
Sugar - 1 tsp
Coriander Roots - 2, chopped
Garlic - 2 cloves, crushed
Water - 1/2 cup

Method:
1. Steam the mussels in a steamer with basil leaves for 10 minutes or until all the mussels are cooked and open.
2. Remove and keep aside.
3. Mix all the sauce ingredients and bring to a boil.
4. Keep aside to cool.
5. Serve the mussels with the dipping sauce.
