Ingredients:
Coriander Seeds - 1 tblsp
Cumin Seeds - 1 tsp
Dried Red Chillies - 5, slit lengthwise, deseeded and soaked in hot water for 15 minutes
Small Onions - 3 tblsp, sliced
Garlic - 8 cloves, crushed
Galangal - 3 thin slices
Kaffir Lime Rind - 2 tsp
Coriander Root - 1 tblsp, chopped
Black Peppercorns - 10
Dried Shrimp Paste - 1 tsp
Method:
1. Fry the coriander and cumin seeds in a pan over low heat for about 5 minutes.
2. Remove and grind to a powder.
3. Add the other ingredients, except shrimp paste, and grind well.
4. Add the shrimp paste to the blender and grind again till a fine curry paste is obtained.
