Tomato Uttappam Recipe
Ingredients:
1 cup parboiled rice
1/2 cup blackgram dal (urad dal)
2 juicy tomatoes, chopped
1-2 green chillies, minced
1 red chilli, broken into bits
A large pinch of asafoetida
Salt to taste
Oil for frying
Mince fine:
2 sprigs curry leaves
A small bunch of coriander leaves
1 small onion (optional)
Method:
1. Soak rice and dal separately for 2-3 hours.
2. Grind dal to a very very fine batter, set aside.
3. Grind rice to a rava consistency; then add the rest of the ingredients (except oil). Grind all of it to a dosai consistency.
4. Add ground dal, mix thoroughly, set aside for 2-3 hours.
5. Before making uthappam add the minced ingredients, mix thoroughly.
6. Grease a tawa lightly, pour a ladleful of batter, spread into a small and thick circle. Pour some oil all over and in the centre, cover, cook till done. When brown, flip over, cook the other side till brown.
