Vegetable Uttappam Recipe
Ingredients:
2 cups idli batter or uthappam batter
1/2 cup boiled peas (mashed slightly)
1/2 cup carrot gratings
1 small potato (grated fine)
Oil for frying
Mince very fine:
1 large onion
2-4 green chillies
1/2 piece ginger
2 sprigs curry leaves
Little coriander leaves
Method:
1. Heat 1 tbsp. oil, fry all the minced ingredients (except coriander leaves) adding carrot, potato gratings, and mashed peas. Saute for 3-5 minutes till lightly firned. Add coriander leaves, mix, set aside.
2. Heat a dosai tawa, grease lightly. Pour a ladleful of batter, spread into a thick circle, not big. Pour some oil all around, cover and cook on low heat. When uthappam is slightly done, spread the vegetable mixture evenly all over. Cover once again and cook for 1-2 minutes longer. If necessary, pour some oil again. Cook on medium heat and cook on one side only.
