Onion Uttappam Recipe
Ingredients:
2 cups idli batter or uthappam batter
A little water
Oil for frying
Mince very fine:
1 large onion
1 carrot grated
2 green chillies
2 sprigs curry leaves
A few coriander leaves
Uthappam batter:
3 cups raw rice
1 cup blackgram dal (urad dal)
4 tbsp. beaten rice (aval)
Salt to taste
Oil for frying
1. Soak rice separately, soak dal and beaten rice together. After 2-3 hours, grind each of these separately.
2. Mix the ground batters thoroughly, adding salt. Leave overnight to ferment.
Method:
1. Add some water to idli batter to make it into dosai consistency.
2. Grease a tawa, pour one large ladleful batter, spread into a thick round.
3. Mix together the minced ingredients and sprinkle on the uthappam. Pour some oil all around and in the centre. Cover and cook till done.
Note:
An alternate method is to mix the minced ingredients with the batter and then make the uthappams.
If desired, the minced ingredients can be sauted for 2-3 minutes in 2 tsp. oil and then added to batter
