Ingredients:
Raw Prawns - 400 gms, peeled and deveined
Olive Oil - 1 tblsp
Garlic - 2 cloves, crushed
Root Ginger - 2 slices, peeled and finely chopped
Chilli Oil - 1 tsp
Tomato Ketchup - 2 tblsp
Tomatoes - 4, chopped
Mango - 1, large, skinned and cubed
Spring Onions - 2, sliced
Method:
1. Heat oil in a nonstick pan over high heat.
2. Add the garlic and ginger.
3. Stir-fry for a few minutes over medium heat until the garlic has browned slightly.
4. Add the chilli oil and tomato ketchup.
5. Stir-fry for 2 minutes.
6. Add the prawns and stir-fry for another 4 minutes or until the prawns have become pink.
7. Add the tomatoes and mango pieces.
8. Cook for a minute or two and transfer to a serving dish.
9. Garnish with spring onions.
10. Serve.
