Ingredients:
Chicken Thighs - 400 gms, boneless and skinless, cut into 4
Lime - 1, cut into wedges
For the Marinade:
Star Anise - 1
Szechuan Peppercorn - 1 tsp
Black Peppercorns - 1 tsp
Lemon Grass Stalks - 1, finely chopped
Garlic - 2 cloves, crushed
Fresh Root Ginger - 1 tsp, finely chopped
Tamari Sauce - 1 tblsp
Sesame Oil - 1 tsp
Five Spice Powder - 1 tsp
Method:
1. Coarsely grind the star anise, peppercorns, lemon grass, garlic and ginger to a paste.
2. Add the tamari sauce, sesame oil and five spice powder.
3. Mix well.
4. Rub the marinade into the chicken pieces.
5. Cover and keep it in a fridge for 60 minutes.
6. Cook the marinated chicken in a preheated oven at 240C for about 20 minutes or until done.
7. Remove and serve.
